
Healthy Recipe of the Week
For those of you who have been indulging on a few too many holiday treats this past week, today’s recipe features a healthful, refreshing salad to cleanse your body and feel rejuvenated.
Adding sweet-tart fruit such as orange, kiwi, or pomegranate to a leafy or whole grain salad can also give you a dose of winter sunshine!
Blood Orange and Avocado Salad
Ingredients
- (1) head Butter Lettuce
- (1) Blood Orange (*may substitute for Navel, Satsuma, or other orange of choice)
- 1 tablespoon Fresh Lime Juice
- 1/4 teaspoon Kosher Salt
- 1 tablespoon Extra-Virgin Olive Oil
- (1) Avocado (sliced)
- (1) Serrano Chili (thinly sliced) (*optional)
- Handful of Fresh Basil Leaves
- Handful of Fresh Cilantro Leaves
- Few Fresh Mint Leaves
Directions
Tear or cut the lettuce into large bite-sized pieces. Peel, halve, and slice the orange.
To make the dressing: In a large bowl, whisk together the lime juice, salt, and olive oil.
Arrange the lettuce, orange, and avocado on a platter. Spoon the dressing over the salad and sprinkle with the Serrano chili (if using), basil, cilantro, and mint.
Yields: 4 servings
