Cold Sesame Noodles

What I love about sesame noodles is that they can be served warm or cold! These versatile noodles can be a great food item to store in the kitchen during this time of the year when the weather can be warm or cool. This recipe’s cold version is a top choice for a packed lunch or a simple dinner on a warm night. If you prefer a tingly dose of spice, add a drizzle of chili crisp!

Ingredients

  • 1/2 pound Whole Wheat Spaghetti
  • 1 tablespoon Toasted Sesame Oil
  • 1/4 cup Peanut Butter
  • 2 1/2 tablespoons Soy Sauce (reduced sodium)
  • 2 teaspoons Rice Vinegar
  • 2 teaspoons Brown Sugar
  • 1 tablespoon Ginger (minced)
  • 2 tablespoons Water
  • 4 cups Crisp Lettuce (shredded)
  • (1) Mini Cucumber (sliced)
  • (1) Scallion (sliced)
  • 1 tablespoon Toasted Sesame Seeds
  • 4 teaspoons Chili Crisp (*optional)

Directions

Cook the spaghetti according to the package instructions. Drain, then rinse under cold water until cool. Transfer to a large bowl and toss with the sesame oil.

In another large bowl, whisk together the peanut butter, soy sauce, rice vinegar, brown sugar, and ginger with two (2) tablespoons water until smooth. Toss the noodles (spaghetti) in the mixture until well combined.

Arrange the lettuce in four (4) bowls. Top with the dressed noodles. Garnish with the cucumber, scallions, and sesame seeds. Serve with the chili crisp (if using).

Yields: 4 servings
