Kiwi & Radish Salad
Ingredients
- (2) Green and/or Yellow Kiwis
- (6) Radishes
- 1 tablespoon White Miso Paste
- 1 teaspoon Ginger (minced or grated)
- 1 tablespoon Rice Vinegar
- 1 tablespoon Sunflower or Grapeseed Oil
- 6 cups Baby Arugula, Spinach, and/or Kale
Directions
Peel, halve, and slice the kiwis. Thinly slice the radishes.
To prepare the dressing: In large bowl, whisk together the miso paste, ginger, rice vinegar, and sunflower or grapeseed oil.
Gently toss the salad greens with the dressing. Scatter the kiwis and radishes on top.
Yields: 4 servings
