
Healthy Recipe of the Week
The last Foodie Friday post featured blueberries so this week it’s all about strawberries! Savoring the seasonal summer fruits!
Summer Strawberry Salad
Ingredients
- 2 tablespoons Unsweetened, Plain Yogurt
- 1 tablespoon Extra Virgin Olive Oil
- 1 tablespoon White Balsamic Vinegar
- 2 teaspoons Dijon Mustard
- 1/4 teaspoon Salt
- 8 cups Salad Greens of choice (eg. Spinach, Kale, Arugula, Romaine)
- 1/2 cup Strawberries (sliced)
- 1/2 cup Cucumber (sliced)
- Add Extra Firm Tofu, Tempeh or Edamame for plant-based protein (*optional)
Directions
In a small bowl, whisk together the yogurt, olive oil, white balsamic vinegar, dijon mustard, and salt. In a large bowl, toss the salad greens, strawberries, and cucumber together. Spoon the dressing over the salad.
Yields: 4 servings
