Healthy Recipe of the Week

The last Foodie Friday post featured blueberries so this week it’s all about strawberries! Savoring the seasonal summer fruits! 

Summer Strawberry Salad

Ingredients

  • 2 tablespoons Unsweetened, Plain Yogurt
  • 1 tablespoon Extra Virgin Olive Oil
  • 1 tablespoon White Balsamic Vinegar
  • 2 teaspoons Dijon Mustard
  • 1/4 teaspoon Salt
  • 8 cups Salad Greens of choice (eg. Spinach, Kale, Arugula, Romaine)
  • 1/2 cup Strawberries (sliced)
  • 1/2 cup Cucumber (sliced)
  • Add Extra Firm Tofu, Tempeh or Edamame for plant-based protein (*optional)

Directions

In a small bowl, whisk together the yogurt, olive oil, white balsamic vinegar, dijon mustard, and salt. In a large bowl, toss the salad greens, strawberries, and cucumber together. Spoon the dressing over the salad.

Yields: 4 servings
