
Healthy Recipe of the Week
The schools are out, temperatures are warmer, and days are longer, summer is here!
Summer Tomato & Bean Salad
Ingredients
- 2 tablespoons Extra Virgin Olive Oil
- 1 tablespoon Fresh Lime Juice
- 1/2 teaspoon Kosher Salt
- 1 1/2 cups Tomatoes (diced)
- 1 1/2 cups Black Beans (*may substitute with White Beans)
- 1 Avocado (diced)
- 2 tablespoons White Onion (minced)
- 2 tablespoons Fresh Cilantro (minced) (*may substitute with Basil)
Directions
Whisk together the olive oil, lime juice, and salt. Toss with the tomatoes, beans, avocado, white onion, and cilantro (or basil).
Enjoy!
Yields: 4 servings
