Are you pressed for time and need to prep a meal fast?

Do you need an inexpensive meal that is healthy too?

Chinese-Style Sautéed Tomato + Egg

This meal was an absolute favorite for wellness expert and senior Peloton instructor,  Emma Lovewell when she was studying abroad in China during college. She ate this dish for breakfast or dinner and often served with side of rice.

Prep all of the ingredients then fire up the stove!

Ingredients

  • 2 tablespoons Sesame Oil (divided) (*may substitute with Extra-Virgin Olive Oil)
  • 3 large Eggs (beaten)
  • 1 teaspoon Garlic (minced)
  • 1 teaspoon Ginger (minced)
  • 1 – 2 tablespoons Scallions (chopped) Add more for garnish!
  • 3 ripe Beefsteak Tomatoes (cut into 2-inch chunks)
  • 2 tablespoons Chinese Cooking Wine (*may substitute for Dry Sherry)
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 1 teaspoon White Pepper

Directions

Heat one (1) tablespoon sesame oil in a pan over medium-low heat. Scramble the eggs until just set. *It is okay if the eggs are on the runny side. Remove from pan and heat and set aside. 

Heat the remaining one (1) tablespoon sesame oil on medium heat. Sauté garlic, ginger, and scallions until fragrant (1 minute). Mix in tomato chunks and Chinese cooking wine. Simmer until tomatoes start to break down and soften (about 3 – 5 minutes). 

Season with sugar, salt, and white pepper.

Garnish with more scallions and serve with rice.

Yields: 4 servings

Cooking Time: 20 minutes
