Healthy Recipe of the Week

The Ultimate Chickpea Salad

Quick to prep and you’ll savor every last bite!

Toss a batch for your next summer cookout!

  • (2) 15-ounce cans of Chickpeas (rinsed and drained)

  • 2 cups Cucumbers (diced) (*Persian cucumbers recommended.)

  • 1 cup Cherry Tomatoes cut (cut in halves)

  • 1/4 cup Red Onion (thinly diced) (May be substituted for shallots)

  • 2 tablespoons Fresh Lemon Juice

  • 1/2 tablespoon Fresh Mint Leaves (chopped)

  • 1/2 tablespoon Basil 

  • 1 head of Broccoli (cut into florets) (May be steamed or raw)

  • Crumbed Feta Cheese (*Optional)

  • 2 tablespoons Extra Virgin Olive Oil

  • 1/2 teaspoon Kosher Salt, to taste

  • 1/2 teaspoon Black Pepper, to taste


Combine all of the ingredients together in a large bowl. Stir and enjoy!

Yields: 4 – 6 servings as a side dish
