The Ultimate Chickpea Salad

(2) 15-ounce cans of Chickpeas (rinsed and drained)
2 cups Cucumbers (diced) (*Persian cucumbers recommended.)
1 cup Cherry Tomatoes cut (cut in halves)
1/4 cup Red Onion (thinly diced) (May be substituted for shallots)
2 tablespoons Fresh Lemon Juice
1/2 tablespoon Fresh Mint Leaves (chopped)
1/2 tablespoon Basil
1 head of Broccoli (cut into florets) (May be steamed or raw)
Crumbed Feta Cheese (*Optional)
2 tablespoons Extra Virgin Olive Oil
1/2 teaspoon Kosher Salt, to taste
- 1/2 teaspoon Black Pepper, to taste
Combine all of the ingredients together in a large bowl. Stir and enjoy!
Yields: 4 – 6 servings as a side dish
