Spicy Shakshuka

Let’s spice up our taste buds!

Ingredients

  • 3 tablespoons Extra Virgin Olive Oil
  • 1 Onion (chopped)
  • 1 Red Bell Pepper (chopped)
  • 2 Garlic Cloves (minced)
  • 1 teaspoon Chili Powder
  • 1 teaspoon Cumin (ground)
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Cayenne Pepper
  • 3 tablespoon Tomato Paste
  • 5 cups Plum Tomatoes (chopped)
  • 8 Eggs (large)
  • 1/3 cup Feta Cheese (finely crumbled)
  • 1 cup Fresh Cilantro (chopped)

Directions

Preheat oven to 400°F. Heat olive oil in ovenproof skillet over medium heat. Cook onion, red bell pepper, garlic, chili powder, cumin, paprika, salt, black pepper, and cayenne pepper for about 5 minutes or until vegetables start to soften.

Stir in tomato paste and cook for 1 minute. Stir in plum tomatoes and bring to a simmer. Reduce hear to medium-low. Cook, stirring occasionally, for about 15 minutes or until sauce has thickened. 

Make 8 divots in the sauce with a spoon. Crack an egg into each divot. Transfer to oven. Cook for 5 to 8 minutes or until eggs are soft-cooked or until desired doneness. 

Garnish with feta cheese and cilantro.

Yield: 8 servings
