Are you seeking a festive and healthy salad or side dish to bring to your 4th of July gathering this weekend?
Are you tired or bored with your same ole’ weekday salad?
Do you need a healthful recipe to use all the blueberries you picked this weekend?
Not only is it kitten season now, it is also blueberry season!
You can adopt a kitten and pick handfuls of blueberries. If you choose to feed blueberries to your cat, be sure to cut the berry in half (to avoid choking) and limit to a few berries. (Source: https://www.petmd.com/cat/which-fruits-can-cats-eat#)

Blueberry Salad
Ingredients
*Amount as desired
- Blueberries
- Avocado chunks
- Pepitas (pumpkin seeds)
- English Cucumbers
- Mint (chopped)
- Feta Cheese (crumbled)
- Lettuce (*may substitute for leafy green of choice)
- Extra Virgin Olive Oil
- Champagne Vinegar (*may substitute for other vinegar of choice)
- Dijon Mustard
- Honey
- Cottage Cheese (*optional)
- Hummus (*optional)
Directions
Dressing Preparation: Combine the olive oil, vinegar, mustard, and honey. Mix thoroughly.
Salad Contents: In a big bowl, mix all of the ingredients (blueberries, avocado, pepitas, cucumbers, mint, feta cheese, lettuce). *Optional: Smear some cottage cheese and hummus on the side of the serving plate. It adds a nice bit of flavor and a lot more protein!
Toss the salad with the dressing. Enjoy!
