Healthy Recipe of the Week

Are you seeking a palatable vegetable side dish?

Do you need a flavorful topping for your grilled chicken, fish, or tofu?

For a boost in selenium, vitamin D, and vitamin B6 to prevent cell damage, support cell growth, and increase red blood cells, add mushrooms to your meal plan!

Savory Mushrooms

Ingredients

  • 3 Garlic Gloves (sliced)
  • 1 tablespoon Tomato Paste
  • 2 tablespoons Extra Virgin Olive Oil
  • 1-pound Mushrooms (sliced) (*Mushroom type of choice)
  • 1 tablespoon Reduced-Sodium Soy Sauce

Directions

In a large pan over medium heat, sauté garlic cloves and tomato paste in the olive oil until the tomato paste begins to darken (1 – 2 minutes). Add the mushrooms and soy sauce. Sauté until lightly browned (3 – 5 minutes). 

Yields: 4 servings
