Tomato and Avocado Salad
A quick to prep salad with 5 ingredients or less!
- 1 pint Cherry Tomatoes (halved)
- 1 tablespoon Extra Virgin Olive Oil
- 1/2 Avocado (sliced)
- Few Leaves of Watercress, Arugula, or Basil
- Pinch of Salt and Black Pepper (*optional)
Toss the halved cherry tomatoes with the olive oil. Top with the sliced avocado and watercress, arugula, or basil. Add salt and black pepper, if desired.
Yields: 4 servings.
