
Healthy Recipe of the Week
For any readers who are committed to a “Dry January”, overindulged a tad with festive holiday cocktails last month, or who (like me) simply prefer a mocktail over a cocktail, this recipe is for you!
Green Tea Mojito Mocktail
Ingredients
- 4 cups Water
- 4 single-serve bags of Green Tea
- 32 – 40 sprigs Fresh Mint (*4 sprigs, divided or separate)
- 2 cups Ice Cubes
- 1 cup 100% White Grape Juice
- 1/2 cup Fresh Lime Juice (about 4 medium-sized limes)
- 1 medium-sized Lime (cut into 4 wedges or lime zest twists) (*optional)
Directions
Add the water to a small saucepan. Bring the water to a boil over high heat. Remove the pan from the heat. Add the green tea tea bags. Let steep for four (4) minutes. *Make sure the tea bags are submerged in water. Discard the tea bags. Let the tea mixture cool for thirty (30) minutes. Pour liquid mixture into a water pitcher. Refrigerate for two (2) hours, or until chilled.
At serving time, add the mint leaves to four (4) glasses. Using a muddler or wooden spoon, mash the mint leaves several times to release their juices. *Do not mash into pulp. Add the ice. Stir the white grape juice and lime juice into the tea mixture. Pour into the glasses. Garnish each glass with a lime wedge and remaining mint leaf.
