
Healthy Recipe of the Week
Our clocks were set back last weekend, darkness settles in at 5PM, and the air is brisk and chilly. It’s time for a new winter squash recipe!
*Note: Be extra careful when cutting squash of any type!
Last winter I attempted to cut a delicata squash (which I thought was an ‘easy’ squash to cut) and horribly cut two fingers on my left hand! 😩 My fingers still hurt when I think about that night! Fortunately, I did not need stitches and still have a year’s supply of bandages of varying types in my medicine cabinet. 🤣
Winter Squash with Tahini Sauce
Ingredients
- 2 small Winter Squashes (eg. Delicata or Honeynut)
- 1 tablespoon Extra Virgin Olive Oil
- 1 tablespoon Tahini
- 1 teaspoon Red Wine Vinegar
- 2 teaspoons Soy Sauce (reduced-sodium)
- 1/2 teaspoon Smoked Paprika
- 1/4 teaspoon Ground Cumin (*may substitute for Ground Coriander)
Directions
Cut in half (carefully!) each winter squash. Steam or bake the squashes. Whisk together the olive oil, tahini, red wine vinegar, soy sauce, paprika, and cumin. Spoon over the steamed or baked winter squashes.
Yields: 4 servings
