
Healthy Recipe of the Week
For our next Summer Salad, we are back to berries!
This week features another way to add blueberries to your salad.
Summer Blueberry Salad
Ingredients
- 1 tablespoon White Balsamic Vinegar
- 1 tablespoon Extra-Virgin Olive Oil
- 1/4 teaspoon Honey
- 1/4 teaspoon Kosher Salt
- Black Pepper, to taste
- 4 cups Salad Greens of choice (eg. Spinach, Kale, Arugula, Romaine, Spring Mix)
- 1/2 cup Blueberries
- 1/2 cup Cucumber (sliced)
- 1/4 cup Radishes (sliced)
Directions
Whisk together the white balsamic vinegar, olive oil, honey, salt, and black pepper. Toss with the salad greens, blueberries, cucumber, and radishes.
Yields: 2 servings
