Beet and Berry Smoothie

Ingredients

  • 2 Beets (scrubbed and cut into quarters)
  • (1) carton of Strawberries (fresh or frozen) (about 2 cups)
  • 1 cup Greek Yogurt (unsweetened) (*may substitute with Cashew Yogurt for vegan alternative)
  • 1/4 cup Peanut Butter (or nut better of choice)
  • 1/4 cup Hemp Hearts
  • 1/4 cup Honey
  • 3 cups Water (or unsweetened milk of choice)

Directions

Steam beets: Cut in quarters and place cut-side down onto a steaming rack. In a large pot, add 1-inch of water and bring to a boil. Place the rack on top and steam for about 30-minutes until fork-tender. Cool and peel. *A simpler option is to boil the beets, but steaming locks in the nutrients.

If using fresh strawberries, trim the leaves and cut in half and place in freezer.

In a blender, add the strawberries (frozen preferred), beets, yogurt, peanut butter (or nut butter of choice), hemp hearts, honey, and water (or milk). Blend on high until smooth.

Adjust sweetness as needed. Top with extra hemp hearts. Enjoy!
