
Healthy Recipe of the Week
A quick, healthful dish to prep when you’re short on time!
Chopped Sweet and Sour Salad
Ingredients
- 1 1/2 tablespoons Red Wine Vinegar
- 3/4 teaspoon Honey
- 1 teaspoon Whole-Grain Mustard
- 1 tablespoon Soy Sauce (reduced sodium)
- 1 tablespoon Extra-Virgin Olive Oil
- 3 cups Salad Greens of choice (eg. Spinach, Arugula, Kale)
- 3 cups Crunchy Vegetables of choice (eg. Carrots, Celery, Snap Peas)
- 1/4 cup Sun-dried Tomatoes
- 2 Scallions (sliced)
- 1/4 cup Sunflower Seeds
Directions
Whisk together the red wine vinegar, honey, mustard, soy sauce, and olive oil. Toss with the salad greens, crunchy vegetables, sun-dried tomatoes, scallions, and sunflower seeds.
Yields: 4 servings
