
Healthy Recipe of the Week
The holidays are just past, but we may still find ourselves dashing around for a festive quick side dish to serve to complement our main meal or bring to dinner gathering.
Zesty Cranberry-Orange Relish
Ingredients
- (1) Whole Orange (including the peel)
- (1) 12-ounce bag Cranberries (fresh or frozen)(*If using frozen, do not thaw.)
- 1/4 cup Sugar
Directions
Wash and chop the orange and discard any seeds. In a large food processor or high-powered blender, combine the cranberries and sugar. Pulse until uniformly minced (about 10 – 12 pulses). In a large bowl, mix cranberry mixture with chopped orange. Refrigerate until cold (about 1 hour).
Yields: 10 servings
