Simple Chickpea Salad
Ingredients
- (2) 15-ounces cans of Garbanzo Beans (drained)
- 2 cups Cucumbers (diced) (*Persian Cucumbers recommended)
- 1 cup Cherry Tomatoes (cut into halves)
- 1/4 cup Red Onion or Shallots (thinly sliced)
- 2 tablespoons Fresh Lemon Juice
- 1/2 tablespoon Fresh Mint (minced)
- 1/2 tablespoon Fresh Basil (minced)
- Crumbled Feta Cheese, to taste (*optional)
- 2 tablespoons Extra Virgin Olive Oil
- 1/2 teaspoon Salt and Black Pepper, to taste
Directions
Combine all of the ingredients in a large bowl, mix thoroughly, and enjoy!
*If you prefer more salad dressing, combine olive oil, red wine vinegar, honey, dijon mustard, salt, and black pepper.
