Simple Memorial Day Salad

A healthy recipe to bring to your Memorial Day barbecue, summer potluck, or meal prep for the busy week ahead!

Simple Chickpea Salad

Ingredients

  • (2) 15-ounces cans of Garbanzo Beans (drained)
  • 2 cups Cucumbers (diced) (*Persian Cucumbers recommended)
  • 1 cup Cherry Tomatoes (cut into halves)
  • 1/4 cup Red Onion or Shallots (thinly sliced)
  • 2 tablespoons Fresh Lemon Juice
  • 1/2 tablespoon Fresh Mint (minced)
  • 1/2 tablespoon Fresh Basil (minced)
  • Crumbled Feta Cheese, to taste (*optional)
  • 2 tablespoons Extra Virgin Olive Oil
  • 1/2 teaspoon Salt and Black Pepper, to taste

Directions

Combine all of the ingredients in a large bowl, mix thoroughly, and enjoy!

*If you prefer more salad dressing, combine olive oil, red wine vinegar, honey, dijon mustard, salt, and black pepper.
