Are you seeking a quick, inexpensive lunch, weeknight dinner, or salad to bring to your next summer potluck?

Barbecue Chicken Quinoa Salad

Ingredients

  • 1 1/2 cups Quinoa (cooked) (*may substitute with Farro, Bulgar, or Brown Rice, or combine all three)
  • 1/2 cup Corn (fresh, cut from the cob)
  • 1/2 cup Black Beans (rinsed and drained) (*may substitute with other beans of choice)
  • 1 cup Barbecue Chicken (shredded) (*may substitute for Extra Firm Tofu, cubed, for a vegan/vegetarian option)
  • 1 Avocado (chopped)
  • Salt and Black Pepper, to taste
  • 1/4 cup White Cheddar Cheese (shredded) (*may substitute for Almond or Cashew Cheese for a vegan/vegetarian option)
  • Barbecue Sauce, to taste
  • 2 Scallions (chopped)
  • Fresh Cilantro, for garnish

Directions

In a large bowl, toss together the quinoa, corn, black beans, chicken (or tofu) and avocado. Season with salt and pepper.

Transfer the mixture into a serving bowl and top with shredded cheese, barbecue sauce, scallions and cilantro.

Yields: 2 servings

Preparation Time: 10 minutes

Cook Time: 15 minutes
