Healthy Recipe of the Week

Last week’s recipe was all about broccoli.

This week’s recipe features savory mushrooms!

These mushrooms are simple to prep and are a perfect pair with roasted chicken.

Roasted Garlic Mushrooms

Ingredients 

  • 3 tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Balsamic Vinegar
  • 1 tablespoon Reduced-Sodium Soy Sauce 
  • 1 1/2 pounds Mushrooms (any type) (halved)
  • 3 Garlic Cloves (large) (halved lengthwise)
  • 4 sprigs Fresh Thyme

Directions

Adjust an oven rack to the lowest position. Preheat the oven to 475°.

In a small bowl, whisk together the olive oil, balsamic vinegar, and soy sauce. On a large rimmed baking pan, toss the mushrooms, garlic, and thyme with the oil mixture. Spread into a single layer, keeping the garlic and thyme near the center.

Roast until the mushrooms are browned on the bottom (18 – 20 minutes).

Sprinkle the thyme leaves over the mushrooms and discard the stems. 

*Tip: Save the roasted garlic leaves for another use such as, mincing them then adding them to a vinaigrette. 

Yields: 4 servings
