Cucumber Avocado Mango Salad
A Light and Refreshing Simple Summer Salad!
Ingredients
- 1 English Cucumber
- 1 Mango (diced)
- 1 Avocado (diced)
- 1 cup Organic Soybeans (shelled)
- ¼ cup Cilantro (chopped)
- Juice and Zest of 1 Lime
Directions
Thinly slice English cucumber using a mandolin and place in a bowl with mango, avocado, organic soybeans, cilantro, and lime zest and juice. Stir until well combined and serve. Enjoy!
