
Healthy Recipe of the Week
While some schools will be starting back up again within the next couple of weeks, it still feels like summer to me! I grew up returning to school the week after Labor Day in early September. Whether you and your children are back in school or still out for summer, this refreshing Strawberry Mocktail can be served all year around!
Strawberry Lime Soda
Ingredients
Strawberry Syrup
- 1 pound Strawberries (washed, hulled, and halved)
- (1) sprig Rosemary
- 1 cup Sugar
- 1 cup Water
- 1 teaspoon Vanilla Paste
Strawberry Soda
- 1/2 cup Strawberry Syrup
- 2 cups Sparkling Water
- Juice of (1) Lime
- Lime Wheels
- Strawberries (frozen) (*may substitute with ice)
Directions
Strawberry Syrup
In a large saucepan, combine the strawberries, rosemary, sugar, water, and vanilla paste and bring to a boil. Reduce heat until a simmer, simmering for about 10 – 15 minutes. Remove from heat and blend until smooth. Strain using a fine mesh sieve and chill.
Strawberry Soda
In a pitcher, combine the strawberry syrup, water, and lime juice. Pour over a tall glass of ice or frozen strawberries. Garnish with lime wheels.
