
Healthy Recipe of the Week
In honor of Peloton instructor, Emma Lovewell returning to the studio from maternity leave next month (January 2025), this week’s recipe features a healthier option for a comforting dish from Emma’s recent e-newsletter. Sweet potatoes can also be a tasty side dish to any festive holiday meal.

Smashed Sweet Potatoes
Ingredients

2-pounds Sweet Potatoes (about 3 medium-sized potatoes)

2 tablespoons Butter

1/4 cup Extra Virgin Olive Oil

2 Garlic Cloves (smashed)

1 teaspoon Dried Oregano

1/2 teaspoon Chili Flakes

Flaky Sea Salt
Directions
Preheat oven to 425°F. Bring a large pot of water to a rolling boil. Boil the sweet potatoes until knife-tender (about 20 minutes). Remove from heat. Melt the butter in a saucepan and combine with olive oil. Add the garlic, oregano, and chili flakes. These herbs will be blooming their flavors for about 2 minutes! Cut the sweet potatoes into disks, and place them on a baking dish, spacing them about 1-inch apart. Spoon butter-olive oil mixture on each potato. Smash and roast for twenty (20) minutes until charred to your taste. Garnish with flaky sea salt. Enjoy!
