
Healthy Recipe of the Week
The days are short, chilly, and brisk and more Christmas trees and holiday lights are up and lit. Time to prep a healthful, festive dish!
Pomegranate Tabouli
Ingredients
- 2 cups Bulgar (cooked) (*may substitute for Quinoa, Brown Rice, or Couscous)
- 1/2 cup Fresh Parsley (chopped)(*may substitute for Cilantro)
- 1/4 cup Almonds (toasted) (sliced or slivered)
- 1/2 cup Pomegranate Seeds
- 1 tablespoon Extra Virgin Olive Oil
- 2 teaspoons Red Wine Vinegar
- 1/4 teaspoon Kosher Salt
Directions
Toss the cooked bulgar, quinoa, brown rice, or couscous with the parsley (or cilantro), toasted almonds, pomegranate seeds, olive oil, red wine vinegar, and salt. Enjoy!
Yields: 4 servings
