Healthy Recipe of the Week

In lieu of the first full weekend of October (or “pumpkin month”), this quick to prep recipe will kickoff of your festive baking season and fuel your active lifestyle.

What is your favorite pumpkin-flavored item to prepare or add to your Trader Joe’s cart?

Cranberry Pumpkin Energy Balls

Ingredients

  • 1/4 cup Raw Honey (*may substitute with Agave Nectar)
  • 1/2 cup canned Pumpkin
  • 1/2 cup + 2 tablespoons Sunflower Seed Butter 
  • 2  tablespoons Flax Seed (ground)
  • 1 1/2 cup Oats (quick-cooked)
  • 1/4 cup Vegan Vanilla Protein Powder (*may substitute for protein powder of choice)
  • 1/2 teaspoon Salt
  • 1  tablespoon Pumpkin Pie Spice
  • 1/2 cup Raw Pumpkin Seeds
  • 1/3 cup + 1 tablespoon Dried Cranberries

Directions

In a medium bowl, add the pumpkin, sunflower seed butter, honey, and ground flax seed and stir well. In another bowl, mix the oats, protein powder, pumpkin pie spice and salt.  Add the wet ingredients to the dry ingredients, and mix thoroughly. Add the pumpkin seeds and dried cranberries to the mixture, and stir well. Store in the refrigerator for at least thirty (30) minutes. Form the mixture into balls slightly smaller than a golf ball size.

Serve immediately or store in an airtight container in the refrigerator for up to one (1) week. *Can be frozen up to six (6) months.
