
Healthy Recipe of the Week
If your garden is bursting with ripe tomatoes, here is a lunch or dinner recipe to make great use of those tomatoes!
No garden? Simply pick up a few large Heirloom tomatoes at your local farmer’s market or grocery store.
Buffalo Mozzarella and Tomato Salad

Ingredients
- 1-pound Buffalo Mozzarella
- 2 -3 large Heirloom Tomatoes
- 1/2 cup Balsamic Vinegar
- Basil
- Extra Virgin Olive Oil
- Salt
- Black Pepper
Directions
Slice the mozzarella in 1/4 inch slices. Slice the tomatoes into similar sizes.
Arrange on a plate, alternating and overlapping each mozzarella slice with tomato. Tear basil leaves and add them to the mix, too!
In a small pot over medium heat, bring the balsamic vinegar to a gentle boil, stirring every 2 – 3 minutes for about ten (10) minutes. This will concentrate the vinegar without burning it. Remove from the heat when the volume has reduced by half. Let cool at room temperature.
Pour the balsamic reduction and olive oil (as needed) over the mozzarella, tomato, and basil salad. Season with salt and black pepper as needed.
