Healthy Recipe of the Week

Are you seeking a quick to prep, healthy breakfast?

Are you craving a warm bowl of oatmeal during the chilly winter months?

Do you want a few tips about how to spice up your plain oatmeal?

Easy Oatmeal

Special thank you to wellness expert, author, and senior Peloton instructor, Emma Lovewell for sharing this classic breakfast meal.

Ingredients

  • 1 cup Rolled Old-Fashioned Oats
  • 2 cups Water
  • Splash of Almond Milk (or milk of choice)
  • Pinch of Salt

Emma’s favorite add-ons:

  • Blueberries
  • Brown Sugar
  • Greek Yogurt
  • Cinnamon

Directions

In a small saucepan, bring the water to a boil and add the oats. Reduce heat to a simmer.

Cook for about 3 – 4 minutes. *If not using old-fashioned oats, refer to the manufacturer’s instructions. Stir about every minute.

Cover the pot, lower the heat, and let rest for an additional 2 – 3 minutes until most of the water has been absorbed. At this point, add a splash of almond milk (or milk of choice) to cool it down and a pinch of salt.

Top with your favorite toppings! Enjoy!

Yields: 2 servings

Cooking Time:  15 minutes
