Patriotic Smoothie Popsicles

  • 1 medium Banana (frozen)
  • 5 ounces Unsweetened, Plain Cashew Yogurt (*may be substituted for diary yogurt)
  • 1/2 teaspoon Vanilla Extract
  • 1/3 cup Blueberries (frozen)
  • 1/2 cup Strawberries (frozen)
  • 5 ounces Strawberry Cashew Yogurt (*may be substituted for diary yogurt)


Pulse banana, plain yogurt, and vanilla extract in a blender until smooth. Pour equal amounts into 3 to 4 ounces popsicle molds. Add 1/2 to 1 tablespoons of blueberries to each mold, and stir around with a small spoon or popsicle stick. Place popsicle molds in freezer for 20 minutes. While the first half is in the freezer, rinse the blender before adding the strawberries and strawberry yogurt, and pulse until smooth. Remove the popsicle molds from the freezer and add the strawberry mixture to each mold. Add the popsicle stick (or popsicle mold handle) into the top. Place the popsicle molds in the freezer for at least 5 hours before serving.

Yields: 6 servings

Preparation Time: 25 minutes

Freeze Time: 5 hours
