Herbed Cottage Cheese Omelet
Ingredients
- (2) large Eggs
- 1/2 cup Low-Fat Cottage Cheese
- 1/2 teaspoon Parsley (chopped)
- 1/2 teaspoon Chives (snipped)
- 1/8 teaspoon Sea Salt
- 1/8 teaspoon Black Pepper
- 1/2 cup Tomato (seeded, diced)
Directions
Crack the eggs into a bowl and whisk lightly. Add the cottage cheese, parsley, chives, salt, and black pepper. Whisk to combine. Coat an eight-inch non-stick skillet with cooking spray. Heat over medium.
Pour the egg mixture into the skillet. Tilt the skillet to cover the off bottom of the pan. Cook for 2 to 3 minutes, gently stirring the cooked parts into the center of the pan. Cook until the mixture is set and cooked through. Fold the mixture in half. Top with tomato.
*Optional: Serve with a salad.
