Let’s kick off the official start of summer with a hydrating and healthful dish!
Cucumbers can help you stay cool, hydrated, and beat the summer heat. While they are often considered a vegetable, cucumbers are actually a fruit. They contain about 95% water, which aids in digestion and helps regulate body temperature.
Crunchy Ribbon Salad
Ingredients
- (4) Mini Cucumbers
- 3 tablespoons Feta Cheese (crumbled)
- 3 tablespoons Vinaigrette
- 1 tablespoon Chives
- Black Pepper and Salt, to taste
Directions
Using a peeler, shave the mini cucumbers into ribbons. In a medium bowl, toss the cucumber ribbons with the feta cheese, vinaigrette, chives, and black pepper and salt. Enjoy!
