
Healthy Recipe of the Week
Spring 🌸 is in the air and Summer ☀️is right around the corner, so this week’s recipe is all about a refreshing treat!
I personally love a refreshing, post-workout smoothie bowl year-round, but when the sun is out and the weather is warmer my smoothie bowl just seems to taste better 😋
A fruity yogurt parfait can be quite similar to a smoothie bowl: both provide a soft, ice cream-like texture, sweet taste, and packed with nutrients.
Raspberry Yogurt Parfait with Peaches
Ingredients
- 1 1/2 cups Greek Yogurt (unsweetened, plain, fat-free) + 1 cup, divided use
- 1 cup Raspberries (fresh or frozen, unsweetened) (*thawed if frozen)
- 1/2 teaspoon Ground Cinnamon
- 1/2 teaspoon Vanilla Extract
- 1 cup Peaches (frozen, unsweetened) (*thawed and diced)
Directions
In a food processor or blender, process 1 1/2 cups of Greek yogurt and raspberries for 15 to 20 seconds or until the mixture is smooth. *Stop to scrape the sides as needed.
In a small bowl, stir the remaining 1 cup of Greek yogurt, cinnamon, and vanilla extract until thoroughly mixed.
In four (4) small cups, layer as follows: Two (2) tablespoons peaches, 1/4 cup raspberry yogurt mixture, 1/4 cup plain yogurt mixture, and two (2) tablespoons peaches.
Pureed alternative: Omit the layering step. In a food processor or blender, process all of the ingredients until smooth. There should be no separation of liquid.
*Tip: Try using different flavor combinations such as, swapping the raspberries for pears or mixed berries, peaches for cherries or mango. Avoid using pineapple, grapes, or dried fruits.
