Healthy Recipe of the Week

As a child through my young adulthood I remember going to dinner with my family and friends at a local Chinese restaurant, Fu Yuan Low, multiple times per month (or even week). Whether it was a quick bite after a busy day, Sunday night ritual, or a birthday celebration, they had the best Chinese food, and simple. While the decor was not fancy, the owners and staff were kind. One staple menu item I remember ordering each time was their vegetable fried rice, which even had pieces of egg. While I do not have this savory recipe, this fried rice recipe sounds like a close second!

Red Scallion Fried Rice

Ingredients

  • 2 tablespoons Peanut Oil
  • 1 bunch Red Scallions (*may substitute for regular scallions)
  • 2 cups Brown Rice (cold and cooked)
  • 2 tablespoons Soy Sauce (reduced sodium)
  • 1 tablespoon Toasted Sesame Oil

Directions

In a wok or large nonstick pan over medium to high heat, heat the peanut oil until very hot. Slice the red scallions and stir-fry until hot (about 1 minute). Add the brown rice and stir-fry until hot (about 1 minute). Season with the soy sauce and toasted sesame oil.

Yields: 2 – 4 servings
