Vegan Summer Salad
Ingredients
*Amount as desired.
*All can be found at Trader Joe’s.
- Beets (pre-cooked)
- Lentils (cooked)
- Edamame (shelled)
- Kimchi (*may substitute for sauerkraut for a probiotic alternative.)
- Nutritional Yeast
- Green Goddess Dressing
Directions
Toss the beets, lentils, and edamame in a big bowl. Add the kimchi (or sauerkraut). Sprinkle in the nutritional yeast (for a cheesy, nutrient boost). Drizzle with the Green Goddess Dressing. Mix thoroughly.
