Yesterday marked the official start of summer!

Are you seeking a quick, protein-packed salad to prep in less than 5 minutes?

Are you craving a weeknight salad or a salad to pack for a day at the beach or on the trails?

Vegan Summer Salad

Ingredients

*Amount as desired.

*All can be found at Trader Joe’s.

  • Beets (pre-cooked)
  • Lentils (cooked)
  • Edamame (shelled)
  • Kimchi (*may substitute for sauerkraut for a probiotic alternative.)
  • Nutritional Yeast
  • Green Goddess Dressing

Directions

Toss the beets, lentils, and edamame in a big bowl. Add the kimchi (or sauerkraut). Sprinkle in the nutritional yeast (for a cheesy, nutrient boost). Drizzle with the Green Goddess Dressing. Mix thoroughly.
