Quinoa and Winter Fruit Tabouli
Ingredients
- 2 tablespoons Fresh Lemon Juice
- 2 tablespoons Extra-Virgin Olive Oil
- 1 teaspoon Lemon Zest
- 1/4 teaspoon Salt
- 2 cups Quinoa (cooked)
- (1) handful of Parsley and Mint (chopped)
- 1/2 cup Orange (chopped)
- 1/2 cup Pomegranate Seeds
- 1/4 cup Pistachios (chopped)
Directions
Whisk together the lemon juice, olive oil, lemon zest, and salt. Toss with the quinoa, parsley and mint, orange, pomegranate seeds, and pistachios.
Yields: 4 servings
