Healthy Recipe of the Week

A healthful festive fare to serve at your next holiday gathering.

Quinoa and Winter Fruit Tabouli

Ingredients

  • 2 tablespoons Fresh Lemon Juice
  • 2 tablespoons Extra-Virgin Olive Oil
  • 1 teaspoon Lemon Zest
  • 1/4 teaspoon Salt
  • 2 cups Quinoa (cooked)
  • (1) handful of Parsley and Mint (chopped)
  • 1/2 cup Orange (chopped)
  • 1/2 cup Pomegranate Seeds
  • 1/4 cup Pistachios (chopped)

Directions

Whisk together the lemon juice, olive oil, lemon zest, and salt. Toss with the quinoa, parsley and mint, orange, pomegranate seeds, and pistachios. 

Yields: 4 servings
