Feta and Lemon Snap Pea Salad
Ingredients
Dressing
- 2 tablespoons Extra Virgin Olive Oil
- 2 Garlic Cloves (minced)
- 1 tablespoon Dijon Mustard
- 1 tablespoon Honey
- Juice of 1 Lemon
Salad
- 1 pound Snap Peas (trimmed and cut a bias)
- 1/4 cup Pine Nuts (toasted)
- 1/8 pound Feta Cheese
- 1/4 cup Mint (torn)
- Chili Flakes (*optional)
Directions
Dressing
In a big bowl, combine the olive oil, garlic, mustard, and lemon juice. Mix until well combined.
Salad
In the same bowl, add the snap peas and pine nuts. Toss until well combined. Add the feta cheese and mint. Serve at room temperature or chilled. Enjoy!
