I am!

Pumpkins set the mood for a cozy Fall/Winter evening, fill our tummies with sweet delight, and are healthy too!

Benefits of pumpkin, include:

Pumpkin Chocolate Chip Cookies

Ingredients

  • 1/2 cup Coconut Flour
  • 1 teaspoon Pumpkin Pie Spice
  • 1/2 teaspoon Sea Salt
  • 1/2 teaspoon Baking Soda
  • 1/2 cup Organic Coconut Oil
  • 1/4 cup Canned Organic Pumpkin Puree
  • 1/4 cup Honey (may be substituted for Agave Nectar or Maple Syrup)
  • 1/2 cup Dark Chocolate Chips

Directions

In a food processor or high-powered blender, combine coconut flour, pumpkin pie spice, salt, and baking soda. Pulse in coconut oil, pumpkin puree, and honey until dough forms. Remove blade from food processor (or place mixture into a medium to large sized bowl) and stir in chocolate chips by hand. Scoop dough one level tablespoon at a time onto a parchment paper lined baking sheet. Press balls of dough down firmly. Bake at 350ºF for 10 to 15 minutes. Cool for 1 hour on baking sheet. *Do not handle prior or cookies will break. Makes 18 servings. Enjoy!
