
Healthy Recipe of the Week
Next week is Thanksgiving and the winter holidays thereafter. This time can be a beautiful and magical time of year, but also a time of rich, high calorie meals. While an occasional indulgence is okay, the saying ‘moderation is key’ holds its ground. This recipe is healthful, nutritious, and festive. Prepare it as a quick weekday dish or as a healthy complement to a holiday potluck.
Ruby Red Pomegranate Salad
Ingredients
- (1) head Radicchio (chopped)
- (6) Radishes (sliced)
- (1) Naval Orange (sliced and quartered)
- 1/2 cup Pomegranate Arils
- 1 1/2 tablespoons Red Wine Vinegar
- 1 1/2 tablespoons Extra-Virgin Olive Oil
- 2 tablespoons Red Onion (minced)
- 1/4 teaspoon Kosher Salt
- 1/4 cup Microgreens (*Optional)
Directions
Divide the radicchio, radishes, orange, and pomegranate arils between four (4) plates. Whisk together the red wine vinegar, olive oil, and red onion and spoon over the salad. Season with the kosher salt. Top with the microgreens.
Yields: 4 servings
