
Healthy Recipe of the Week
Attention all pasta and salad lovers! This recipe will satisfy both cravings!
Noodles for the pasta pining in us and zucchini to add more vegetables to our diet.
Pistachios for protein. Add chopped tofu or crumbled tempeh for added protein.
And, fresh mint and lemon to rejuvenate our taste buds!

Pistachio and Mint Zucchini Salad

Ingredients
- 3 Zucchinis (washed)
- 1/2 cup Pistachios (chopped)
- 1/2 bunch Mint (chopped)
- 1/4 cup Extra Virgin Olive Oil
- Juice of 1 Lemon
- Garlic (chopped or minced), to taste
- Salt, to taste
- Black Pepper (optional), to taste
Directions
In a big bowl, use a vegetable peeler to peel the zucchinis and make “ribbons” (noodles). *Emma also recommends using a mandoline. Add pistachios and mint.
In a separate bowl, whisk together the olive oil with lemon juice and garlic until just combined.
Add the dressing, carefully tossing to avoid bruising the mint.
Season with salt and black pepper. Enjoy!
