With the unofficial start of summer just past and the official first day right around the corner, it’s time to prep a summer-fused slaw!
Sesame Ginger Slaw
Ingredients
- 1/2 cup Pineapple (chopped into cubes)
- 1/4 cup Mayonnaise (*optional, vegan)
- 2 tablespoons Tahini
- 2 tablespoons Rice Vinegar
- 1 tablespoon Ginger (grated)
- 1/4 teaspoon Kosher Salt
- 1 teaspoon Toasted Sesame Oil
- 4 cups Coleslaw Mix
Purée pineapple with mayonnaise, tahini, rice vinegar, ginger, kosher salt, and toasted sesame oil. Toss with the coleslaw mix.
Yields: 6 servings
