In light of my birthday, this week’s healthy recipe is a sweet treat.
Paleo Vanilla Birthday Cake

Ingredients
- 3/4 cup Coconut Flour
- 1/2 teaspoon Baking Soda
- 9 large Eggs
- 1/2 cup Salted Butter (melted)
- 1/2 cup Maple Syrup
- 1 tablespoon Vanilla Extract
Directions
Preheat oven to 350°F. Pulse coconut flour and baking soda in a food processor. Pulse in eggs, butter, maple syrup, and vanilla extract. Grease two (2) 6-inch springform pans. Pour batter into prepared cake pans. Place cake pans on a baking sheet. Bake for 25 – 35 minutes. Cool and frost with Paleo Chocolate Frosting (or frosting of choice).
What else? Sprinkles, of course!
