Today is my birthday!

While I am another year older… *sigh*….

Today marks the start of a new year!

A year to face new challenges and become a better version of myself.

What goals will you set for yourself on your special day?


In light of my birthday, this week’s healthy recipe is a sweet treat.

Paleo Vanilla Birthday Cake

  • 3/4 cup Coconut Flour
  • 1/2 teaspoon Baking Soda
  • 9 large Eggs
  • 1/2 cup Salted Butter (melted)
  • 1/2 cup Maple Syrup
  • 1 tablespoon Vanilla Extract


Preheat oven to 350°F. Pulse coconut flour and baking soda in a food processor. Pulse in eggs, butter, maple syrup, and vanilla extract. Grease two (2) 6-inch springform pans. Pour batter into prepared cake pans. Place cake pans on a baking sheet. Bake for 25 – 35 minutes. Cool and frost with Paleo Chocolate Frosting (or frosting of choice).

What else? Sprinkles, of course!
