Apple Salad with Figs and Almonds
A Quick, Easy-to-Prep Salad to Add to Your Lunch Box!
- 10 ounces Apple (diced)
- 2 ounces Dried Figs (chopped)
- 4 ounces Celery (diced)
- ½ cup Non-Fat, Plain Greek Yogurt
- 1 tablespoon Lemon Juice (or juice of 1 lemon)
- ½ ounce Slivered Almonds
- 5 ounces Carrot (grated)
Combine apple, figs and celery in a small bowl. Add yogurt and lemon juice and mix thoroughly. Top with almonds and grated carrots. Makes 4 servings.
