
Healthy Recipe of the Week
As we experience warmer, sunnier ☀️, and longer Spring days, our taste buds may crave a sweet treat after dinner. Kristin McGee shared a healthful lemony treat in her newsletter last week that I want to share with all of you.

Lemon 🍋Cheesecake Protein Cups
Ingredients
- 1 cup Cottage Cheese
- 1 cup unsweetened Greek Yogurt (*may substitute for Cashew Yogurt for a vegan alternative.)
- Juice from 1/2 a Lemon
- 2 scoops Lemon Collagen Powder (or unflavored/vanilla) (*optional)
- 1 – 2 teaspoons Honey (*may substitute for sweetener of choice.)
- (3) Graham Cracker Squares
- Lemon Zest
- Fresh Berries (*optional)
- (4) Ramekins (or small jars)
Directions
In a blender or food processor, blend the cottage cheese, Greek yogurt, lemon juice, collagen powder (if using), and sweetener (of choice) until super smooth and creamy. Place the graham crackers in a zip lock bag and crush them by hand or with a rolling pin; or, crush them in a food processor. Grab the four (4) small ramekins or jars. Sprinkle a layer of graham cracker crumbs at the bottom of each one. Spoon the cheesecake mixture over the graham cracker crust layer and smooth it out. Place the filled ramekins or jars in the refrigerator and chill for at least four (4) hours. *Overnight is preferred. Prior to serving, top each ramekin or jar mixture with extra graham cracker crumbs, a little lemon zest, and berries (if using). Store in the refrigerator for up to three (3) days.
Yields: 4 servings (*Double the ingredients for meal prep or parties.)

Per Serving (for 4-serving version using nonfat Greek Yogurt, 2% Cottage Cheese, and 1 teaspoon Honey): 140 Calories | 17g Protein | 11g Carbohydrates | 3g Fat | 0g Fiber (not using fresh berries)
