
Healthy Recipe of the Week
When I think of Fall, the chillier and shorter days, warm, cozy moments spent at home reading books, watching movies, and baking new and traditional recipes come to mind.
What comes to mind for you? What warm memories fill your heart?
Throughout my childhood through today, my Mom almost always bakes a batch of banana muffins when a few bananas have turned too mushy. These muffins were always such a treat to eat in my dorm room during college, apartment as a young adult, continuing to my apartment today! I have tried to replicate the family recipe myself, but it never comes out the same (or as yummy). Can you relate?
Earlier this week I received a new banana bread recipe in my inbox from a favorite Pilates, Yoga, and Meditation Teacher, Kristin McGee that I thought I’d give a try! My birthday is next week and my Mom is coming to visit. What a special time to bake a new banana bread recipe!
Mini Banana Bread Loaves
Ingredients
- 2 Eggs
- 1/2 cup Coconut Sugar (*May substitute with brown or cane sugar)
- 1/2 cup Cashew Yogurt (plain, unsweetened) (*May substitute with Greek Yogurt)
- 1 teaspoon Vanilla Extract
- 1 teaspoon Baking Soda
- 1 1/4 cups Almond Flour (*May substitute with Coconut Flour, Whole Wheat Pastry Flour, or regular flour)
- 1 – 2 Bananas (overripe)
- Unsweetened Coconut Milk (or milk of choice) (*Optional) (*If mixture consistency comes out too dry, add milk; amount as needed.)
Directions
Kristin says, “This recipe comes together so easily!”
Preheat the oven to 350°. Whisk the eggs. Add the sugar, yogurt, vanilla, and baking soda. Slowly stir in the flour. Mash bananas and add to mixture. Mix all ingredients thoroughly. Pour the mixture into the muffin tins or mini loaf pan (greased). Bake for 20 – 22 minutes. *Check a bit earlier (depending on your oven).
