A Quick, On-The-Go Breakfast or After School Snack!

Baked Blueberry Oatmeal Cups

Ingredients

  • 2 cups Rolled Dry Oats
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1/2 cup Banana
  • 1/2 cup Coconut Oil
  • 1 cup Unsweetened Coconut Milk (or milk of choice)
  • 2 tablespoon Honey
  • 1/2 teaspoon Vanilla Extract
  • 1 medium-sized Egg
  • 1 cup Blueberries (fresh or frozen)

Directions

Preheat oven to 350°F and grease a muffin pan. (*Coconut oil spray is recommended.) In a medium-sized bowl, add oats, baking powder, salt, and cinnamon. In a separate bowl mash banana, add coconut oil, milk, honey, vanilla extract, and egg. Combine wet and dry ingredients. Fold in the blueberries. Fill muffin tins evenly. (*Muffins will not rise too much.) Bake for 20 – 25 minutes or until golden brown. Serve warm!
