
Healthy Recipe of the Week
The end of summer is approaching, but here is a side dish to continue that summer feeling into the cooler, fall months!
*Note, pineapple and papaya are available all year long (though they may peak in summer and fall).
Savory Roasted Papaya and Pineapple Side Dish
Ingredients
- 1 Papaya (about 2 cups cubed)
- 1 Pineapple (about 4 cups cubed)
- 2 tablespoons Extra Virgin Olive Oil
- 2 tablespoons Fresh Tarragon (*may substitute for 2 teaspoons dried tarragon)
- 1 tablespoon Fresh Thyme (*may substitute for 1 teaspoon dried thyme)
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
Directions
Preheat oven to 375°F. Peel papaya, scoop out the seeds, and cube into one-inch chunks. Peel the pineapple, core, and cut into one-inch chunks. In a large bowl, toss the fruit with the olive oil, tarragon, thyme, salt, and black pepper. Spread the fruit out on a baking dish and cook until the tops of the fruit begin to brown (about 20 minutes). Increase the oven temperature to 425°F and cook until the fruit edges caramelize (about 8 to 10 minutes). Remove from the oven and allow to cool slightly before serving.
