Chocolate Chip Macaroons

A healthy treat to satisfy your next craving!

Ingredients

  • 1 ½ cup Coconut Flakes
  • 2/3 cup Almond Flour (may be substituted for coconut flour or whole wheat flour)
  • ¼ cup Pure Maple Syrup (may be substituted for raw agave nectar or raw honey)
  • 3 tablespoon Coconut Oil
  • ½ teaspoon Vanilla Extract
  • 3 tablespoon Chocolate Chips (dark or semisweet)

Directions

Preheat oven to 200° F. Line a cookie sheet with parchment paper or lightly spray coconut spray on a cookie sheet. Add coconut flakes, almond flour, pure maple syrup, coconut oil, and vanilla extract to a food processor or blender. Pulse until well blended and the mixture starts to clump. Gently fold in the chocolate chips with a spoon. Using a one-inch cookie scoop, pack the mixture into the scoop and place cookie on cookie sheet. Bake in the oven for 10 minutes. Turn off oven, and leave cookies inside oven for an additional 15 minutes. Remove from oven and let cool completely. Store in an airtight container in the refrigerator for up to 10 days.

*These cookies are soft. They do not firm up like a standard cookie because they are meant to be almost raw.
